Sodium alginate is widely used in the food industry. American give high appraisal of it with the name of “wonderful food additive”. Japanese appreciate it as“long life food additive.”
a: Man-made products
Sodium alginate is the important material to produce seaweed products such as man-made grape and man-made cherry.
b: Iced food
Sodium alginate is as a stabilizer of ice cream because of its dense organization is very equal and the slow solution speed. It is the main material of the dainty cold powder and jelly.
c: Cake food
As a stabilizer of cake( such as cookies, bread, fine dried noodle, chocolates etc) and a polish of bread. Sodium alginate can keep the cookies sweet-smelling and avoid of falling to pieces, and make the noodle smooth, reduce breaking ratio of noodle and fragmentation of bread.
Sodium alginate is also the good thickener of jam, chili sauce, jelly, tomato ketchup, fish paste, pudding and salad flavoring.
Sodium alginate is as the stabilizer of the beer and clarifier of the wine.
e: Freezing and keeping fresh
When food( fruit, fish etc)is covered with the film of sodium alginate and kept isolated from air, the film will stop bacteria from invading, constraint water evaporation of food itself and prolong time of preservation.
In printing and textile industry
It has been a long history since sodium alginate was used in starching , packing and printing. In printing, it is the good material with wide use in the cotton, wool, silk and synthetic fibre. Especially since the reactive dye was found in the world, there has been many years’ history of application. There is no other gelatinigation which can compare beauty with it by so far.
It can’t react with the reactive dye or form covalent bond as result of having second hydroxyl in its structure without the origin hydroxyl, and meanwhile having strong cathodic carboxyl in its organization. This is its great property. Therefore, it not only does not absorb the dyestuff but also excludes it. It is easy to move the dyestuff from the gelatinigation to the firbre which benefits keeping clearness and uniformity of the printing. Therefore the printing is clear, vivid, high in the dyeing quantity and has good handle and firm degree at the same time.
The products of medium and low viscosity are suitable for the printing requirements of net, roll style and handwork printing. It has the flowing property of the pseudoplastic fluid, which means that it will turn watery when being cut and restore the original viscidity after losing being cut. This fits for fine printing, full ground printing and wet printing. It can make products with the features of thin line, clear profile and good uniformity.
